Many companies try to sell us their masala chai, whether in a shop or on a store shelf, claiming theirs to be authentic, but never come close to presenting the taste you experience in India or when you are a guest in an Indian home. Therefore I made the effort to learn how to make it myself, and I usually do a pretty good job because I was taught by Indian friends. However, when I make it on my own, it comes out different every time, depending on the strength of the ginger I use or the cardamom, etc. I recently discovered Elaichi chai blend, and I must say it is good every time...it's an exact science! One teaspoon gives a nice strong tea flavor, just like in India, and it has the right amount of cardommon(which to me is the star ingredient of any masala chai). we started elaichi co. because we believe chai has a way of bringing people together.
that belief grew into two cafes in berkeley and san francisco, and eventually into packaging the exact same chai so you can make it at home.
